Abstract:
An automated food processing system and method is provided that allows food to be dispensed, fried and packaged in a suitable container, which may be an individual portion-sized container. In one embodiment, the system includes separate automated modules for dispensing, frying and packaging the food. In one embodiment, an automated dispensing device dispenser a predetermined portion of food from a bulk storage container or food dispensing magazine. Food is dispensed from the automated dispensing device to an automated fry device that can include at least one circular fry wheel having a plurality of food containing compartments. After the food is fried it is dispensed from the fry device to an automated packaging device. The automated packaging device dispenses food to a container that may be an individual portion-sized container that is retrieved, erected and held into position for filling by an automated container handling system. After a food container is filled, a conveyor system transports the filled container to a suitable pick-up location.

Abstract:
A cooking medium heating system includes a cooking vessel for holding a cooking medium, at least one heat transfer tube for transferring heat generated by combustion to the cooking medium, and a combustion gas eductor for venting combustion gas exhausted from a combustion gas exhaust opening. Each heat transfer tube includes a bottom wall, a pair of side walls, a top wall, and a combustion gas entry opening and a combustion gas exhaust opening formed therein at opposite ends thereof. The tubes may include at least one heat transfer fin and a combustion gas flow separator dividing the tube into two spaces between the separator and the pair of side walls. The combustion gas eductor includes a flue including a narrower, exhaust gas receiving end disposed adjacent to the combustion gas exhaust opening, a nozzle including a nozzle inlet and a nozzle outlet, and a blower.

Abstract:
A device and method for automated frying of foods is provided. The device includes a fry vat for containing and heating cooking oil, at least one circular fry wheel with a plurality of compartments having openings towards the perimeter of the fry wheel, a drive mechanism for rotating the fry wheel, and an overflow passageway located above a normal operating level of cooking oil in the fry vat. The fry wheel rotates about a radial axis disposed above the normal operating level of the cooking oil. A control mechanism for causing the drive mechanism to rotate the fry wheel back and forth to simulate shaking of a fry basket may be included. A food inlet is preferably included adjacent the overflow passageway or a foam deck including the overflow passageway. In a preferred method, the fry wheel submerges food in cooking oil and shakes the submerged food in a fry basket.

Disclosed is a method and apparatus for automatically adjusting the amount of ice that may be delivered from an ice storage reservoir to a point of use, such as from an ice reservoir of a combination beverage dispenser and ice reservoir to a container, with a high degree of accuracy, consistency and repeatability.
