Abstract:
Apparatus and method for forming a specialty food product, such as a fortune cookie wherein a flat, flexible cake, after being cooked, is placed on a first, flat, fixed surface and is shifted by continuously moving pins over the first surface and onto a second, flat fixed surface having a slot therethough. A continuously moving suction device removes a strip of paper from a stack and places the strip on the cake on the second surface and forces the cake into the slot to fold the same about a first axis until the cake halves formed by the fold are generally parallel with each other. As the folded cake moves downwardly in the slot, a pair of continuously rotating arms engage respective ends of the cake and fold it about a second axis which is substantially perpendicular to and slightly below the first axis. The second fold is made about a shiftable support lever which is fixed at least during the initial part of the second fold but which shifts downwardly to allow release of the resulting cake product for movement by a conveyor for transfer to a remote receiving station. The produce cools and becomes relatively rigid after the second fold.
